COOKING | Easiest ever home made apple sauce.

When I cook roast pork there are two elements to the dinner that I cannot do without: crackling and apple sauce. The veg and how the potatoes are presented may vary but I will always want crunchy crackling and a big dollop of apple sauce on the side.
The thing is, I am not a fan of shop bought apple sauce because it is too sweet and also because of all the added ingredients put in there that just aren't required so after a little experiment I found a way to have my own homemade version which is sweet enough and almost kind of cider-y (is that a word?!). Rustic shall we say? Best of all, you only need a common, every day apple to make this.
Yup, that's it.
Here's what to do:
Take one or two apples, depending on how many people you are feeding and place them in the oven with your pork joint when there is only an hour's cooking time left.
Once the pork and the apples are cooked you will have a delicious jus / gravy with both meat juice and apple juice. Yum! Remove your apples and set aside pork to rest.
Place your apples in a bowl and mash - as you can see I am just using a spoon as they are so soft they mash easily.
Remove the apple stalks from the mix.
Add a little black pepper if required and serve your delicious, rustic apple sauce alongside your delicious roast dinner and enjoy!
(You could also pour a little meat juice into the sauce and mash that in too which is delicious!)
N.B. Apples I used were pink ladies.
